Vegetable Clear Soup or Veg Clear Soup is one of the easiest and healthiest soup recipes. It gets ready in a jiffy and is full of the goodness of vegetables. Vegetables are a good source of vitamins, minerals and dietary fibre. Some of them like broccoli , cabbage and mushrooms also contain protein. Blending the fruits and vegetables robs them of their nutrients and that is the reason this soup is one of my favourite. It is prepared without blending the vegetables.

  • 1 tbsp oil
  • 1/2 tsp finely chopped garlic
  • 3/4 tsp finely chopped ginger
  • 1/3 cup sliced spring onions
  • 1/2 cup sliced cabbage
  • 1/2 cup finely sliced carrot
  • 1/2 cup broccoli florets
  • 1/2 cup sliced mushrooms
  • 3 ½ cups water or as required
  • 1 tsp salt or as per taste
  • 1/2 tsp freshly ground black pepper
  • 1 tsp fresh lime juice
  • Finely chopped spring onion greens for garnishing
  • (optional)

How to prepare Vegetable Clear Soup?

  1. Wash and chop or slice the vegetables. Keep the other ingredients ready.
  2. On a low flame, heat oil in a sauce pan
  3. Once the oil is hot, add finely chopped garlic and ginger and sauté them for 10-15 seconds. Note: Do not let them turn brown.
  4. Add sliced spring onion and sauté for 15-20 seconds. Note: Do not let it turn brown.
  5. Now add the sliced/ chopped vegetables and sauté for a minute or two. We have used mushrooms, broccoli, carrot and cabbage for this recipe but you may also use capsicum, bell peppers, french beans and celery. Cauliflower can be used instead of broccoli.
  6. Add water, salt and freshly ground black pepper. Tip: For a better taste always use freshly ground black pepper instead of pepper powder.
  7. Once the soup comes to a boil, cook for 5-6 more minutes on medium heat.
  8. After the soup gets cooked, switch off the gas flame and add lime juice. This gives a very nice taste to the soup. Vegetable Clear Soup is ready. You may garnish it with finely chopped spring onion greens.

Serve the vegetable clear soup hot.
